Fryingpan Bacon | Elevated Cuts

HALIBUT WITH BACON AND TOMATOES

Ingredients

  • 2 halibut filets (5 oz each)
  • 1 parsnip
  • 1 onion
  • 250 g small potatoes
  • 1 zucchini
  • 1 bell pepper
  • 1 lemon, juiced
  • 2 sprigs thyme
  • 4 tbsp vegetable oil
  • Salt & pepper
  • 2 large sheets parchment paper
  • 1 slice Fryingpan Bacon
  • 1 tomato

Directions

  1. Preheat oven to 400°F. Prepare vegetables.
  2. Sauté vegetables in oil for 10 minutes. Season.
  3. Season fish with lemon and salt. Place on parchment over vegetables. Add thyme.
  4. Whisk lemon, oil, salt and pepper. Drizzle over fish. Fold parchment and bake for 20-25 minutes.
  5. Crisp bacon. Prepare tomato. Open packets, plate, and garnish with bacon and tomato.
