BACON MACARONI SALAD WITH CHARRED SCALLIONS

Ingredients

  • 12 oz elbow macaroni, cooked al dente
  • 8 oz Fryingpan Bacon, baked
  • 2 bunches scallions
  • 1 tbsp reserved bacon grease Dressing:
  • 2/3 cup mayonnaise
  • 1/4 cup rice wine vinegar
  • 1 tbsp dijon mustard
  • 1 tsp hot sauce
  • Salt & pepper to taste

Directions

  1. Cook pasta. Bake bacon, reserving 1 tbsp drippings.
  2. Char scallions under the broiler with bacon fat and salt for 1-2 minutes. Cool.
  3. Whisk mayo, vinegar, mustard, and hot sauce. Toss with macaroni.
  4. Chop bacon and scallions, and mix into the pasta. Season with salt and pepper.
  5. Chill the salad. Serve cold.
